Champagne isn't just for New Year's Eve Anymore

Most think of New Year's Eve ending in a toast with a crisp, tart and bracing beverage like champagne. Its acidity cuts through salty and smoked flavors well ... which is why you'll so often find it paired with caviar or smoked salmon.
So while you're enjoying New Year's brunch today - why not add a champagne as one of the components? It'll compliment the omelets, souffles, corned beef hash, smoked sturgeon or shrimp that might be part of the menu selections on your buffet.
